Easy Poached Fish and VegetablesThis dish is low-carb, low-calorie, loaded with flavor, and is ready in fifteen to 20 minutes.
2 4-to-6 oz. fish fillets, fresh or frozen (any firm, white fish will do)
Place the fillets and vegetables in a large skillet. (If the fish is frozen, you do not need to defrost it.) Add the seasoning, lemon juice and Liquid Aminos to the stock or broth and pour over fish and veggies to cover. If stock does not cover fish, add water. Heat over medium high until boiling, and then turn down to simmer and cover. Cook until fish flakes easily with a fork (frozen fish will take about 10 minutes; fresh fish may take a little less time). Vegetables will still be crispy. Gently remove fish with a slotted spatula and arrange with vegetables on plates. 2 servings - an All Spirit Fitness exclusive.
