Low-Fat Mexican RiceThis side dish recipe doesn't need a lot of work to be authentic. Try to use either
fresh salsa (from your deli section) or, if it's available in your area, a 7-oz. can of Herdez Salsa
Casera (you would find it in the Mexican foods section of your market). Serve with soft tacos made
with corn tortillas, shredded, skinless chicken breast, chopped cilantro and onions and fat-free
refried beans and you have a Mexican meal that's nutritious and very low in fat!
1 medium onion, chopped
Microwave the onions for a minute and a half to soften them. Coat a 10-inch covered, non-stick skillet with cooking spray. Add microwaved onion, chopped garlic and rice and sauté for a few minutes, until the rice has started to lightly brown. Add water and salsa and bring just to a boil. Lower heat to simmer and cover. Cook for 15 minutes or until rice is done (contrary to popular belief, it's okay to check doneness sometime in the last 5 minutes - just do it once and be very quick about it!). Let rice rest, covered, for a few minutes before serving. 4-6 servings - any leftovers will taste great the next day! An All Spirit Fitness exclusive.
