Mediterranean Egg White ScrambleTo make the scrambled eggs extra fluffy, add a couple tablespoons of milk or soymilk
to the eggs and whip in a blender before adding to the pan. With the sausage, garlic and feta cheese,
you don't need any additional spices, although a couple turns of freshly ground pepper may be nice.
1 link gourmet chicken sausage (if you can find sausages made with peppers, onions or sun-dried tomatoes, all the better)
Slice the sausage into rounds approximately a quarter inch thick. Coat a medium nonstick skillet with olive oil cooking spray place on medium high heat. Add the sausage and cook. Add the garlic and spinach leaves, add more cooking spray, and sauté until sausage is heated through and spinach is wilted. Push the mixture to the side of the pan, spray the surface once more with the cooking spray and add the egg whites. Scramble until halfway done, then blend in the sausage and spinach mixture. Add the feta cheese and finish cooking - leave the eggs just a little moist, as they will continue cooking after you take the skillet off the burner. 2 servings - an All Spirit Fitness exclusive
