Many people who claim to hate vegetables will tolerate zucchini. Why? Because its
bland, agreeable flavor can go just about anywhere, from lasagna to bread. Since it's low-calorie (just 20
calories a serving) and contains nice amounts of vitamin C and potassium, it's also a nutritional asset
(just so long as it's not deep fried or served with a fat-filled dressing). You can do just about
anything with zucchini - grill it, shred it into spaghetti sauce or a salad, bake it, stuff it, steam
it alone or with other vegetables, sauté it, or slice it up and eat it raw with a healthy,
low-fat dipping sauce. It goes with nearly every food imaginable, from eggs to any type of meat or
main dish. With the possible exception of breakfast cereal, zucchini can enhance any meal.
When shopping for zucchini at the market, opt for the smaller ones - they have the best flavor and texture. Bigger is not better in this case - the larger zucchini tend to be fibrous and even bitter. Your zucchini should be firm and its skin thin. Avoid wrinkled zucchini, and any that are bruised or limp. Zucchini are best served fresh, so only buy as many as you need. The best way to get zucchini isn't at the market at all, but to grow them yourself. A warning here, though - one plant will bear loads of zucchini!
