Although they're now available all year round, somehow watermelons just taste best in
the summer. Perhaps this is because there are few things as refreshing in the summer heat as a big
slice of chilled watermelon. And watermelons are one of the healthiest snacks around - they contain
generous amounts of vitamins C and A, along with potassium and magnesium. Watermelon also contains
the antioxidant lycopene - in fact, it contains more lycopene than tomatoes! And two cups of watermelon
will only put you back 100 calories, making it a delicious and filling snack.
Choosing a watermelon is simple enough - pick out one that's pleasantly rounded and symmetrical, and make sure it doesn't have any cuts, dents or bruises. Look for the pale yellow underside - that's where it sat on the ground while it was ripening. Pick it up - your watermelon should feel heavy for its size, since it should be over 90% water. Uncut, a watermelon keeps for about a week to 10 days at room temperature; after it has been cut open, cover it with plastic wrap and store it in the refrigerator. For the best flavor, eat what's left within a couple of days. There are loads of watermelon recipes out there, but who needs them when the juicy, red flesh tastes so good all by itself?
