At this time of year, choosing pumpkin as Great Stuff is a no brainer. Like the other
orange-colored vegetables, pumpkin is a great source of beta carotene - a half cup cooked supplies all
your daily requirements. And a full cup of the stuff is only 49 calories. That's why pumpkin pie is less
fattening than most holiday desserts (providing you go light on the whipped cream) - it's the sugar, milk
and pie shell that add most of the calories. People generally use canned pumpkin for their recipes -
cooking fresh pumpkin is rather time and work-intensive. But when you carve that Halloween Jack-O-Lantern,
do reserve the seeds - they're delicious roasted, along with being a good source of fiber, iron, zinc
and vitamins B and E (sometimes you'll find pumpkin seeds packaged at the store as pepitas). For
those who are health conscious, pumpkin is one of the truly wonderful things that you'll find in
abundance during the holidays.
