Everyone knows about the health benefits offered by eating 5 servings of vegetables a
day, but to get the heftiest nutrition impact, you must choose your veggies wisely. On the top of your
list should be broccoli, which is perhaps one of the most beneficial foods on the face of the earth.
It has as much calcium, ounce for ounce, as a glass of milk, more vitamin C than an orange, three
times as much fiber as a slice of wheat bread, vitamin K and anti-oxidants galore - just call it
"Super Veggie"! And broccoli goes everywhere - raw, it fits nicely in a salad or combines with a
low-fat dip. Added to lasagna or soup, it offers extra nutritional punch. Steam it with its cruciferous
cousin, cauliflower, and toss with a touch of olive oil and herbs for a simple side dish. Sautee it
with garlic or shallots and add some sun-dried tomatoes, then top with a light sauce if you want to
get fancy. While frozen broccoli is convenient (great when you're adding it to a casserole or soup),
fresh broccoli will always have a better taste and texture, so visit your produce section if you're
serving it on its own or with just another vegetable. Never overcook it - it should be bright green
and never, ever mushy. A note of caution -
studies suggest that microwaving broccoli will cause it to lose most of its antioxidants.
Steaming it on the stove is just as simple and nearly as quick - plus it will taste better! A small
amount of care in preparing broccoli will net you a mountain of healthy returns.
