Asparagus is one of those rare vegetables that is as elegant as it is healthy. Its
long, graceful lines and compact head dress up any dinner plate. And asparagus is packed with
Vitamins A and C and loaded with phytochemicals. (In fact, it has the highest amount of the
phytochemical Glutathione of any known fruit or vegetable. Glutathione is a powerful antioxidant and
anticarcinogen). An average serving has 60 percent of the recommended daily amount of the B Vitamin
Folacin, which helps keep your cells in good repair. It's also high in fiber, and a serving of 6
spears contains a mere 25 calories (without adding a rich sauce, that is).
Asparagus is an easy-going vegetable — you can cook it just about any way you want, or eat it raw. When cooking, just remember to choose spears that are uniform in size so they're all done at the same time. While you can get fresh asparagus year-round at the supermarket, it's even better when it comes straight from a garden during its regular growing season, late March through June. Freshly harvested asparagus is especially sweet and tender. A meal that includes it is a special occasion. Need we mention that if you are lucky enough to have garden fresh asparagus that it should be eaten without any dressing or sauce?
