When nutritionists put together their lists of Most Healthy Foods, kale is often
near the very top. It comes from the same family as other healthy vegetables such as broccoli,
cabbage and Brussels sprouts, so its health quotient is no surprise. Kale is loaded with vitamins A
and C and iron, plus a host of phytochemicals that are said to help prevent cancer. In addition it
contains a form of calcium that is more easily absorbed by the human body than the calcium in milk.
While it's available year-round, kale is best in the late winter and early spring, when the leaves
are sweetest.
So what is kale doing decorating serving plates instead of sitting in front of you alongside the main course? The fact that kale's goodness is so little known amongst so many people is tragic, especially since it's so easy to prepare. Just rinse thoroughly, cut the leaf away from the rib (folding the leaf in half lengthwise makes it a simple task) and steam the leaves until they wilt. Or you can boil the leaves in vegetable broth. Toss with olive oil and pine nuts, or spray on some Bragg's Amino Acids, toss it in soups, sprinkle it on top of a pizza — there are endless ways to enjoy kale. And those who don't like the chewy texture of kale (or who think they don't like it) can still get its health benefits by chopping it up very fine (you can use a food processor) and adding it to anything from lasagna to meatloaf to tuna salad - you'll get the nutrients without even knowing it's there. But why not acquire an appreciation for this attractive veggie? It's a pretty plant that's also good for you, and that's an unbeatable combination!
