Imagine a diet food that's loaded with nutrition, can mold itself to just about anyone's taste buds, is low-cal, low-carb and low-fat, and comes in vegetarian, vegan or meat lovers' variations. It sounds too good to be true but it isn't — it's old-fashioned, everyday hot soup. Most soup recipes are loaded with veggies, and because they're mostly liquid they're more filling than denser, higher calorie foods. Serve up protein with chicken soup or a bean soup (the bean soup also adds fiber), or just veggies with tomato, vegetable or roasted red pepper soup. Minestrone, lentil, vegetable beef — there's a soup for everyone. A cup of soup makes a great appetizer and can fill you up so that you're less likely to overeat when the main dish arrives. If you're looking to shed a few pounds, replace a meal with a hearty bowl of low calorie, veggie-filled hot soup. Want some crunch? Just add a side of salad with low-cal dressing.

There are just a few rules if you plan to add soup to a diet program: choose a broth-based soup, not one that is made from cream (creamy soups are generally much higher in calories and fat, although lowfat recipes do exist). Look for soup with the least amount of salt content. Feel free to add extra vegetables — throw some frozen or fresh spinach into chicken soup, for example — for an extra nutritional boost. It's convenient to buy soup in a can or carton, and you'll find countless choices at your local market or health food store, but it's almost as easy to make your own. Just pick out a broth — chicken, vegetable, beef or seafood — with the lowest salt content you can find. Then add your favorite ingredients — pre-cooked chicken, onions, carrots, leeks, canned tomatoes, broccoli, green beans — whatever you like. Season to taste (instead of just tossing in more salt, try some herbs — this page from Recipe Gold Mine has suggestions for many different soups). Simmer the mixture until the vegetables are tender and everything is heated through. Since the flavor of soup often improves the day after it is prepared, you'll want to make enough to last a few days.

Eating healthy doesn't require a complicated diet plan or expensive, prepared foods. Just enjoy soup as your main course, fit in some exercise and you'll feel great.
