Healthy eating doesn't have to be complicated. It can be as simple as tossing
blueberries into your cereal or a cup of yogurt. The tart-sweet taste of blueberries will brighten
up anyone's day, and each little purple-blue berry is jam-packed with nutrients. In fact, it's the
blueberry's deep color that contains its most powerful, health-giving ingredient: anthocyanin, a
phytochemical that fights against damaging free radicals. Fresh blueberries are also full of
vitamins C and A, manganese and fiber. Research has indicated that blueberries enhance cardiovascular
health, contain anti-aging properties, and even battle against age-related memory and vision loss.
While blueberries are available year-round, they are best from May through October, which is their natural harvest time. Choose blueberries that are firm and lightly frosted in appearance. Shake the container — the berries should rattle around. Berries that are clumped may be mushy or moldy and past their prime. Blueberries will keep in your refrigerator for up to two weeks, as long as you don't wash them until you're about to eat them (blueberries don't handle moisture well over the long term). And you can always find blueberries in the freezer section of your favorite market, ready to add to your favorite recipe. If you want to stay young forever, then blueberries should be a regular part of your diet, not only because of how healthy they are, but also because they're fun to eat. Toss them in pancakes or low-fat muffins (the homemade kind, not the high-calorie, high-sugar monstrosities you find in the store). Throw them in the blender with lowfat or soy milk, half a banana and ice for a yummy smoothie. Eat them right out of the container as a snack.
